Gavin Hughes

Head chef at the Byron at Byron resort. A passionate supporter of local and seasonal produce. He is fun, engaging and knowledgable in many food styles. Gavin works with the Bangalow Cooking School on many large group cooking projects, be it in the rainforest or on site at exclusive venues.

Marie Albano-Hauge

Italian born and has grown up in a family dominated by foodies. Coming from a line of chefs and restaurateurs Marie has always had a keen interest in cooking and a passion for Southern Italian cuisine. As a child she learned the secrets of preparing home made sauces, pastas, risottos and antipasto and is keen to share them.

With a bright and bubbly personality, a load of enthusiasm and some amazingly simple and scrumptious recipes Marie's classes are always a lot of fun culminating in a true Italian feast.

Orathai “Ice” Lasser

A traditional Thai chef with French influences. Ice brings her reverence and passion to the food that she creates and shares. Born in Thailand, Ice ran a successful seafood street restaurant and had a loyal following. If you would like to approach Thai Cooking with intuition and heart then Ice will be the chef to guide you.

Leah Roland

Principal of Bangalow Cooking School, chef, caterer, business owner and chef at Gaia Retreat. Leah is an author of over 80 articles and has contributed to many cookbooks, she and has a degree in Visual Arts.  Cuisines Leah specializes in are Middle-eastern, Greek, Indian as well as modern health based food philosophies. She is in demand for food demos at public and corporate events, and guidance with adjusting food menus for specific dietary purposes. With a passion for seasonal and healthy cooking, Leah’s driving mission is not only helping guide students and her to find their cooking intuition, but also to encourage them to enjoy the confidence that comes from the experience.
